Shrimp tempura is a classic bento lunch ingredient. Of course we don't make tempura in the morning, but if you've made it for dinner the night before, make extra so that you can have it for lunch the next day.
You may think tempura needs to be eaten warm, but in the morning, crisp the tempura in the oven or toaster oven. The shrimp will retain some of its crispiness until lunch, but be sure to let it cool before packing it in a lunch box. Bentos are mostly eaten at room temperature so a little extra seasoning is always added so the taste is not compromised.
